Try This EASY & Delicious Spinach Lentil Curry With Jasmine Rice

All your senses will come alive when you try this easy-to-prepare, delicious, nourishing recipe that combines protein and fiber-rich lentils with fragrant and fluffy jasmine rice, along with flavorful and nutritious spices like ginger, garlic, and curry powder. The addition of coconut milk adds a creamy and slightly sweet taste, while the spinach provides a boost of antioxidants and essential vitamins. It's so good, you'll forget this dish is good for you! It's a client favorite and mines too! And, you'll be in and out of the kitchen in less than 30 minutes!

More than just a delicious recipe...

This recipe provides several benefits for hormone health! Lentils are a good source of fiber, which can help regulate blood sugar and insulin levels. The dish also contains spinach, which is high in antioxidants that can help reduce inflammation and support healthy hormonal balance. Additionally, ginger and garlic in the recipe have anti-inflammatory properties that can also support hormone health. Jasmine rice is a good source of carbohydrates, which can help support thyroid health and energy levels. Overall, the combination of lentils, spinach, and jasmine rice in this dish can provide essential nutrients and support healthy hormone function.

Spinach Lentil Curry With Jasmine Rice


1. The Ingredients

Serves 4 Time To Prepare: 25 Minutes

1 tbsp Extra Virgin Olive Oil

1 Yellow Onion (large, chopped)

3 Garlic (clove, minced)

1 tbsp Ginger (peeled and grated)

2 tbsp Curry Powder

1 tsp Cumin

1/2 tsp Sea Salt

1/4 tsp Red Pepper Flakes

1 Lime (juiced)

1/2 cup Vegetable Broth

1 cup Canned Coconut Milk

2 cups Lentils (cooked)

1/2 cup Cilantro (optional, roughly chopped)

6 cups Baby Spinach

1 cup Jasmine Rice (dry)

2 tsp Maple Syrup


2: The Directions

  1. In a large skillet, heat oil over medium heat. Add the onions, garlic, and ginger to the pot, stirring and sautéing for 3 to 5 minutes until the onions begin to soften.

  2. Stir in all of the curry powder, cumin, salt, and red pepper flakes, and continue to cook for a minute until the spices become fragrant.

  3. Add the lime juice and vegetable stock. Scrape any browned bits off the bottom of the pan. Then add the coconut milk, lentils, and cilantro and stir to combine. Wilt in the spinach 2 cups at a time.

  4. Bring the curry to a gentle boil then reduce the heat and simmer for 15 minutes. Meanwhile, cook your rice according to the instructions on the package.

  5. When the curry has thickened slightly, stir in the maple syrup. Divide the cooked rice onto plates and top it with the curry. Enjoy!

3: Notes

No Rice: Serve alone or with quinoa, couscous, or potatoes instead.

Leftovers: Keep covered in the fridge for up to 4 days or in the freezer for up to 2 to 3 months.

Too Thick: If the curry gets too thick, add extra vegetable broth to thin it. Add extra cilantro and lime.
